Elway’s Vail Opens at The Lodge at Vail, A RockResort
 Iconic Colorado steakhouse opens first location outside of Denver
 
VAIL, Colo., Nov. 22, 2011 – Elway’s Vail is now open in a newly renovated space located in the heart of Vail Village at The Lodge at Vail, A RockResort, less than a block from the base of Vail Mountain. Elway’s Vail is open for après ski from 2:30 p.m. daily with dinner service starting at 5:00 p.m. daily. Reservations can be made by calling (970) 754-7818 or online at Elways.com

Named for former Denver Bronco quarterback and NFL Hall of Fame Inductee John Elway, Elway’s Vail is the restaurant’s first location outside of Denver and the third location in the collection. The original Elway’s in Denver’s tony Cherry Creek neighborhood debuted in 2004. A second location followed in 2008 in downtown Denver at The Ritz-Carlton Denver.

Executive Chef Shawn Cubberley will be front and center in the brand new exhibition kitchen that is the focal point of the restaurant. Cubberley, a four year Elway’s culinary veteran, leads the team in Vail. Culinary Director Tyler Wiard is the creative force behind the Elway’s menus and oversees quality and specifications for all three Elway’s kitchens. 
 
General Manager Joe Infantino and Assistant General Manager Steve Kingsbury are management alums from the Cherry Creek restaurant and are looking forward to bringing the award-winning Elway’s culture to the Vail Valley. Elway’s has been named Best Steakhouse by numerous local and regional publications.
 
The menu at Elway’s Vail reflects the most popular signature items on the Cherry Creek board and offers hand-cut, aged USDA prime steaks, fresh seafood and shellfish, Colorado Rack of Lamb, Dashi-braised Chilean Seabass, Grilled King Canyon Buffalo Ribeye and Elway’s delicious Smash Burger. Signature side dishes include King Crab Fried Rice, Brussels Sprout Hash and Creamed Corn. Appetizers and lighter items include John’s Salad with house made Green Goddess dressing, Charred Red Pepper Soup, Dungeness Crab Cakes and Lamb Chop Fondue, a perennial top seller. 
 
Après-ski guests can enjoy selections from Elway’s unique appetizer list and bar menu. Bar manager Linnea Bergman and her team will include ingredients from the ever-growing regional distillery movement including Stranahan’s Colorado Whiskey and several of the spirits in the Leopold Bros. collection.
 
Elway’s will also have an extensive wine list with wine by the glass and 350+ selections available by the bottle including several Colorado wines. Sommelier Jim Lay a long-time fixture on the Vail dining scene, promises old favorites and a few surprises on the Elway’s wine list.
 
Construction of the new Elway’s wrapped up in mid-November. Designed by Denver-based Oz Architecture, the new restaurant encompasses approximately 5,500 total square feet, including outdoor spaces. The restaurant features natural wood, raw steel and light stone throughout three separate interior dining areas. Each offers a distinct experience for guests to enjoy; an intimate formal fireside dining area that can also be reserved for groups; a larger, more casual dining space that includes a lively bar perfect for après-ski; and a covered outdoor dining patio that can be used year round. Finally, there is an additional expansive outdoor patio that will be open for cocktails and casual dining as weather permits.
