Keystone Ranch Restaurant Has Appointed Vincent D’Amato as Executive Chef and Debuts Exciting New Menus

Keystone, Colo. – June 20, 2017 – Keystone Resort is pleased to announce the appointment of Vincent D’Amato to Executive Chef of Keystone Ranch, alongside exciting new menus to kick off the summer season. In his new role, D’Amato will oversee the evolution of Keystone Ranch, combining his extensive knowledge and experience with a passion for culinary arts that has been inspired by his travels.
 
“I’m thrilled to be embarking on this new step in my career at one of Keystone’s most widely-acclaimed restaurants,” said D’Amato. “I’m very much looking forward to working with the team to bring fresh culinary ideas and new dishes that are true to the spirit of both Keystone and Colorado to guests and locals alike.”
 
Most recently, D’Amato was the owner and executive chef at Uptown Scratch Kitchen in Saint Augustine, Florida. Utilizing locally sourced ingredients to craft an ever-changing menu from scratch each day, his restaurant earned the number one rating on Trip Advisor out of more than 500 restaurants in Saint Augustine. Prior to his time at Uptown Scratch Kitchen, D’Amato also opened Taste Global Cuisine in Old San Juan, Puerto Rico, and held executive chef positions at properties such as Turnberry Isle Miami, the Wyndham Grand Pittsburgh and the PGA National Resort & Spa in Palm Beach. He has earned a number of awards and recognitions throughout his career, including Conde Nast Traveler’s “Top 105 Best Tables in the World” in 2008 for his restaurant Taste Global Cuisine.
 
Utilizing a mix of classical and modern cooking techniques, D’Amato is a true purist when it comes to the culinary arts. His vision for the restaurant will be to utilize local flavors, ingredients and traditions to provide a unique palate explosion for guests, intriguing all senses through flavors, textures and temperatures. In his new role, D’Amato has unveiled new menus for the summer, which include signature dinner dishes such as wild mushroom bisque, lobster ceviche crudo and Rosen Farms rack of lamb with foie gras essence and red zinfandel emulsion. The lunch menu features an elevated spin on flat breads and sandwiches such as a crab cake BLT, made with jumbo lump crab, seared pork belly, heirloom tomato, shredded romaine and blood orange tarragon mayonnaise.
 
This summer, the Keystone Ranch will feature a new summer après menu, where wines by the glass are half price between 3:30-5:30 p.m., as well as breakfast, lunch and dinner service, making any time of day the perfect time to experience D’Amato’s culinary vision.
