David Sanchez has been appointed executive chef at The Osprey at Beaver Creek, a RockResort, Travel+Leisure’s #1 Top Resort in the Continental United States for 2012. Chef David will be charged with reimagining the culinary experience at the 45-room boutique hotel, including the tapas-style Osprey Lounge, which focuses on farm-to-table ingredients.
Currently focusing on a full new menu to kick off the winter season, Chef David’s personal mission strongly aligns with that of the restaurant as he is an advocate for local sustainability. David also has an affinity for creating sensory cuisine, as he believes that food is a medium by which emotions can be received. He has always cooked under the mantra, “Cook with strength and love.”
Bringing more than 25 years of culinary experience to The Osprey, Chef David is no stranger to Beaver Creek, as he previously served as the executive chef and general manager of Allie’s Cabin. Most recently, David was the executive chef and operating partner of Soleil on Lake Travis, a high-quality, high-volume, cliff-side restaurant in Austin, Texas. He has also held executive chef positions at Blu Figs Gourmet Lounge, The Brightwater Club and Apatite Café, among others. David has taught his trade at the university level, served as a Demonstration Chef for Bon Appetit Magazine and has collaborated with world class, celebrity chefs.
Personally, Chef David’s culinary career began in the kitchen of his Italian grandmother where he watched her cook meal after meal and learned what it meant to be truly passionate about food. Although cooking was just a job for David at first, he was convinced by his mentors to attend culinary school after more than 10 years in the restaurant industry. Ultimately, David received his degree in culinary arts from Johnson and Wales University in Charleston, South Carolina, where he graduated Suma Cum Laude.
He is part of the Vail Resorts Culinary and Restaurant Development Team, the CMC Advisory Board, Co-Mentor and Coach for the National Restaurant Association ProStart Program, a member of the Club Chef Institute and a Certified Sommelier through Court of Master Sommeliers.
